Carrot and beef burger with avocado, rucula and dried fruit couscous salad

Ingredients

Hamburgers:
4 IZIDORO Carrot and Beef Burgers

For couscous, avocado and dried fruit salad:
150g fine-grained couscous
150 ml of water
2 small avocados
100g of dried fruit (walnut, pine nut, hazelnut, etc.)
2 to 3 tablespoons of sesame oil
2 to 3 sprigs of chopped mint (leaves only)

To season the salad with a sesame vinaigrette dressing:
2 tablespoons of cider vinegar
6 tablespoons of sesame oil
½ clove of garlic
1 dessert spoon of mustard
1 teaspoon of honey Salt and black pepper (for seasoning)

 

How to Prepare (30 minutes)

Cozer o couscous:
Place the couscous in a salad bowl. Drizzle it with sesame oil (2-3 tablespoons) and mix well. Heat water with a pinch of salt up to the boiling level. Then cover the couscous with the boiled water for about 3 minutes until the water is completely absorbed. With the help of a fork separate the grains and let it cool.

Chop the dried fruits and toast them lightly in a frying pan, over medium heat, or in the oven for about 5 min at 180ºC. First, peel the avocado, remove its core and cut it in medium sized cubes. Then, wash the mint leaves, wipe them well with kitchen paper and chop them finely. Add this to the couscous.

Prepare the vinaigrette:
Open the garlic in half (lengthwise), remove the garlic germ *, and finely chop a half of the garlic clove. In a bowl, add half the chopped garlic, mustard, honey and vinegar and mix well. Incorporate the oil and then stir it. Season with a pinch of salt and black pepper (preferably freshly ground). Pour the vinaigrette over the salad and mix it well.
To cook the hamburgers **: use a non-stick frying pan and when it is very hot, place the hamburgers for 5 minutes on each side, until they are grilled.

Serve the hamburgers with the couscous, avocado and dried fruit salad garnished with mint leaves.

* Chef’s Note: The garlic germ must be removed because it is indigestible,especially when uncooked.
** Chef’s Note: IZIDORO’s Meat and Carrot Hamburgers are already seasoned, therefore it is not necessary to add salt! (See packaging) .In order to grill de 4 hamburguers at the same time it is necessary to have a wide frying pan to allow space between them.
