Soy sausages and spinach baked pie
You can use almost any vegetable in this recipe. It is an excellent way to use leftovers.
Ingredients
1 cup of Izidoro Soy Sausages Cocktail (sliced)
6 eggs
500 ml of skimmed milk
60g almond flour
65g wholemeal flour
Salt (as needed)
4 tablespoons of grated light parmesan cheese (optional)
Vegetable filling
1 onion
1 spinach sauce (you can also use sprouts)
2 sprigs of fresh thyme or 1 teaspoon of dried thyme
How to prepare (50 minutes)
Preheat the oven to 210ºc. Place a baking sheet in the oven after brushing it with olive oil. Cut the onion and spinach.
Heat the oil and sauté the onion, spinach and thyme over medium heat for 5 minutes. Stirring occasionally. Reserve.
Whisk the eggs until frothy. Add milk, flour and salt. Stir well until smooth.
Add the sautéed vegetables, cheese and sausages.
Spread the dough on the baking pan and pour in the filling . Bake it for 30 minutes or until golden brown.
Prepare the salad. Place the beet leaves (chard), strawberries and tomatoes in a large bowl and drizzle it with olive oil and lemon juice. Season with salt and pepper. Take the baked pie from the oven, let it cool and serve.
